Day 1 is winding down. I’ve survived, well that’s a bit dramatic seeing as I’m
completely full as satisfied, not to mention proud of myself. I had a snack at work, hard boiled egg & string cheese. Then when I got off I stopped at subway and got a footlong roasted chicken breast on wheat with tons of veggies and mustard. (half for dinner and I’m saving the other half for my lunch tomorrow). I also got some baked lays (only 130 calories, big difference from my normal choice, cheetos!) and the little pack of apple slices for dessert. Completely yummy and something easy and healthy on my late night of work. I usually get off at 5 or 6 so cooking is easier.
I really enjoy cooking so I’m going to try out a lot of new “healthy” recipes and I’ll post pics and recipes. I really want to try and make menus for my week while I’m off on Sunday and Mondays. That way I will have time to get the groceries and then prep a lot of healthy choices for the week. Maybe a casserole of something for Wednesday nights, $5 footlongs a deal, but I’d like to eat at home more often.
